6 Vegetarian Dishes to Rival Turkey This Thanksgiving

As someone who enjoys a varied diet, I have plenty of vegetarian friends, and I’ve sampled numerous plant-based dishes. Together, we’ve discovered some fantastic options perfect for Thanksgiving that cater to both vegetarians and meat-eaters alike. Here are some of my personal favorites to prepare and share. 1. Crustless Quiche

Quiche is a dish I enjoy at any time of day. The crustless quiche featured on The Bojon Gourmet enhances this traditional recipe with a delightful mix of potato, goat cheese, Gruyère, and chives. By baking it in a cast iron skillet, it develops its own crispy edges without the extra calories of a crust, leaving more appetite for the tasty dishes surrounding it!

2. Stuffed Butternut Squash

Butternut squash ranks among my top fall vegetables. To elevate it for Thanksgiving, try the tempting stuffed version inspired by the Pickles & Honey blog—a filling made with tempeh and rice takes it to the next level of satisfaction. (See also: 12 Easy Squash Recipes for Fall)

3. Acorn Squash with Walnuts and Cranberries

If you’re like me and can’t get enough squash in the holiday season, then here’s a delightful option. This dish balances sweetness and heartiness, making it suitable as either a main course or dessert. The rich stuffing of walnuts and cranberries creates a wholesome and delicious treat for everyone to enjoy!

4. Savory Sweet Potato Gnocchi

Gnocchi holds a special spot among my pasta favorites. This recipe from Salt & Wind strikes a perfect balance between savory and sweet, with the sweet potato gnocchi complemented by a sauce of brown butter, balsamic vinegar, and fresh sage. If you’re short on time, feel free to use store-bought or frozen gnocchi and whip up the easy sauce.

5. Vegan Veggie Wraps

These vegan wraps offer a fun dish for the plant-based guests at your table. They combine roasted chickpeas and sweet potatoes all rolled into soft flatbread with a creamy sauce. They’re not just tasty; they’re also adorable and easy to prepare. Don’t hesitate to swap out the sweet potatoes for any other roasted root vegetable!

6. Brussels Sprouts and Root Vegetables

This dish brings together the slight bitterness of Brussels sprouts, robust root vegetables, crunchy pecans, and the sweetness of cranberries and cinnamon. Julia’s Album offers a delightful recipe that uses butternut squash, but feel free to incorporate any mix of roasted root vegetables for greater variety.
